Apricot Delight Salad

This is yummy, light and makes a huge batch.

1- 6oz pkg apricot or peach gelatin
1- 15 1/4 oz can crushed pineapple
2 c. buttermilk
1- 12 oz container frozen non-dairy whipped topping

Combine gelatin and pineapple in saucepan and bring to a boil.  Cool.  Add buttermilk and whipped topping and stir until mixed.  Pour into bowl or mold and refrigerate to congeal.
