Angel Biscuits

These are one of Carolyn's yummy biscuit recipes.  They can be made ahead of time and this recipe can be halved.


5 cups flour
1 tsp salt
4 TB sugar (or 2 TB honey)
2 TB dry yeast
2 cups buttermilk
1 tsp soda
4 TB baking powder
1 cup shortening
1/2 cup warm water


Dissolve yeast in water.  Sift dry ingredients.  Cut in shortening.  Add yeast and buttermilk to dry ingredients.  Mix.  Knead lightly and quickly 20-30 times.  Roll and cut on floured board.  Lay on greased cookie sheet.  Heat oven to 400 degrees.  Let biscuits rise 10 minutes.  Bake 10-15 minutes.  If you want to bake only part of these, store the rest (covered in Saran wrap in the fridge a few days, then allow them to rise 20 minutes at room temperature before baking).  Also they may be frozen ready-to-bake.  Put in oven and turn it on to 400 degrees.
