Becky's Pasta

She should name this Three-Plate Pasta, because that is how many you will eat! She made it up, and she deserves all the credit!

1 small onion, chopped
3 cloves garlic, minced
1/2 cup cubed ham (i cut mine small)
2-3 mushrooms chopped big
(these are approximate as I did not measure)
1 heaping tsp dried basil
1/2 tsp rosemary
1/2 tsp italian seasoning
pinch onion salt
generous pinch salt
sprinkle with black pepper

Saute above ingredients in olive oil on med. high until they start to seep, but don't let the onions get transparent--they were good with a little bit of texture.  Once everything is a little browned, add 3 chopped roma tomatoes.  Let the tomatoes cook about 30 seconds to 1 minute, then add 1.5 cups chopped fresh spinach.  Take off heat.

Serve over penne.  Top with shredded mozarella and sprinkle with parmesan.
